3 tbsp. extra virgin olive oil
1 tsp. lemon zest or peel
2 tbsp. lemon juice
2 tsp. Dijon mustard
1/2 tsp. sugar
1/4 tsp. salt
1/8 tsp. pepper
5 cups baby spinach leaves
1 1/2 cups thinly sliced, peeled, seeded cantaloupe wedges
1 cup seedless grapes, halved
1/2 cup reduced-fat crumbled Feta cheese
1/4 cup thinly sliced red onion
In a large bowl, whisk together oil, lemon zest and lemon juice, mustard, sugar, salt and pepper. Add spinach, cantaloupe, grapes, cheese, and onion. Toss lightly to combine.
Can also add a 1/3 cup packed fresh mint leaves, if desired.
