Danish version can be distinguished from Italian Fontina by the red wax rind. Fontina is less aged, and therefore semi-soft and mild with a somewhat nutty flavour. While rich, herbaceous and fruity, it can be substituted for Gruyère, Emmental, Beaufort, Taleggio, Edam, or Gouda.
